The oxidation processes were studied in chicken patties enriched in n-3 fatty acids, after 8 days of storage at 4 °C under different aerobic conditions, and following heat treatment. Significant effects were seen on lipid and cholesterol oxidation and the sensory qualities for whole flaxseed addition in the chicken feed (i.e., n-3 fatty acid enrichment), and for the different package-atmosphere conditions. For the raw chicken patties, n-3 enrichment increased the colour L* values, while after the heat treatment, there were higher thiobarbituric acid reactive substances (TBARs) and cholesterol oxidation products (COPs), and the rancidity was more pronounced. In comparison with the low O2 ((0.5%) package-atmosphere condition, O2 enrichment (80%) increased the instrumentally measured colour values, TBARs, total and individual COPs, and the rancidity became pronounced. The most suitable package-atmosphere condition of these raw n-3–enriched chicken patties is a very low O2 atmosphere without or with an O2 scavenger.

Organic and/or mineral fertilizers significantly influence phenolic profile of chicory. In general more phenols were found in chicory that was fertilised with organic fertilisers. Fertilizer administration provides a discriminant classification of the chicory cultivars according to their phenolic compounds.

A total of 234 food service managers schools completed a self-administrated questionnaire for process evaluation; 177 out of 194 random selected schools provided menus for menu quality evaluation; 120 school lunches from 24 schools were measured and nutritionally analysed for output evaluation. Survey among food service managers revealed high levels of implementation at almost all process evaluation areas of the guidelines. An even more successful implementation of these guidelines was found in relation to organization culture issues as compared to technical issues. Differences found in some process evaluation areas related to location, size and socio-economic characteristics of schools. Evaluation of school menu quality demonstrated that score values followed a normal distribution. Higher (better) nutrition scores were found in larger-sized schools and corresponding municipalities with a higher socio-economic status. School lunches did not meet minimum recommendations for energy, carbohydrates or dietary fibre intake nor for six vitamins and three elements. The implementation of the guidelines was achieved differently at distinct levels. The presented multilevel evaluation suggests that different success in implementation might be attributed to different characteristics of individual schools. System changes might also be needed to support and improve the guidelines implementation.

The aim of this study is to prepare high-protein pasta with high nutritional quality, with emphasis on its amino acid composition, as ordinary durum pasta lacks lysine and threonine. Ordinary durum wheat pasta contains, on average, 77 % carbohydrate, and can have even less than 10 % protein. Protein-enhanced pasta was produced by adding high amounts of plant protein extract (40 % dry matter) without (plain high-protein pasta) or with 3 % dried spinach powder (high-protein spinach pasta) to durum wheat semolina. This analysis shows that these high-protein neutral and spinach pasta contain 36.4 and 39.6 g of protein per 100 g of dry mass and represents a true alternative to durum wheat pasta for low-carbohydrate diets.

A member of our research programme Polak take an active part in the research new class of tetracycline lead structures with potent antibacterial activity, particularly their share was in the development of analytical method (SPE extraction method, LC-MS) for the determination of active components. A team of researchers led by Petković cloned gene for biosynthesis of tetracycline antibiotics named chelocardin, produced by the bacterium Amycolatopsis sulphurea. In collaboration with Acies Bio, d. o. o., then with newer procedures of biosynthesis developed a new tetracycline antibiotic carboxamido chelocardin. It is distinguished by a new modus operandi and excellent activity against many multi-resistant pathogens that cause hospital-acquired infections. Particularly important is its effectiveness against Gram-negative bacteria, for example against Pseudomonas aeruginosa.
