Peach volatiles were determined by applying the HS-SPME. For the method development volatile aromatic components found in peaches were tested on 5 fibers: Polydimethylsiloxane - PDMS, Carboxen/Polydimethylsiloxane - Car/PDMS, Polydimethylsiloxane/divinylbenzene - PDMS/DVB, Carboxen/Polydimethylsiloxane/Divinylbenzene - DVB/CAR/PDMS, Polyacrilate - PA. Three main groups, which define the peach flavor, were individually tested: the group of alcohols, C6 group and the group of lactones. Results showed the best performance on the following fibers: PDMS, PDMS / CAR and PDMS / CAR / DVB.
