The textbook presents in detail a number of analytical techniques and several sampling and preparation techniques, where SPME is presented.

COBISS.SI-ID: 248140800The up-grading of peach aroma was the study of the VC of ewes' and goats' cheeses. Main groups defining typical cheese odour were presented and analysed according to added starter culture (SC) or not. Comparison of cheeses made with Lyofast MS 062 CM, Lyofast MOTC 082 DC, and cheeses with no added SC, revealed the increase in content of some acids (butanoic, hexanoic and isovaleric) in favour of Lyofast MS 062 CM. Free fatty acids (butanoic acid, hexanoic acid, octanoic acid) were the most predominant VC found in all cheeses. The goats' cheeses made with Lyofast ST 046 had lower amounts of acids in general and also octanoic acid (goaty flavour) was lower. The highest amount of ketones was found in ewe's cheese made with mixture of culture for Montassio cheese and Lyofast MOTC 082 DC.

The magazine allows fruit growers direct contact with the development and guidelines needed for the development of the field.
