A model organism, yeast Saccharomyces cerevisiae was used to investigate antioxidant activity of ethanolic extract of propolis at the cellular and proteome level. With two-dimensional electrophoresis, we analyzed protein profile of cell extract (total proteome) and mitochondrial fraction of cell extract of yeast after 1-h exposure to extract. The most apparent changes in protein abundance were found on mitochondrial proteom, including antioxidative proteins and proteins included in ATP synthesis. Methodological approach mentioned in the article is used also in our research project.

Research work is mostly focused on study of bioactive compounds from food and marine environment as well as different environmental stress factors on yeast as a model organism at proteome level. It collaborates also with Faculty of Pharmacy, National Institute of Biology, Acies Bio and Food Science and Technology Department at Biotechnical Faculty, where proteom of other organisms is investigated (cell lines, plants, bacteria).
