The capacity for removal of ochratoxin A (OTA) during alcoholic fermentation was evaluated in batch systems with Saccharomyces cerevisiae. Batch alcoholic fermentations were carried out medium added with OTA. The study showed that in growing phase cultures, OTA removal was significant only after extended contact with yeast biomass, but not during alcoholic fermentation. We also demonstrated that OTA was not metabolised, but possibly adsorbed by the yeast cells. The presence of OTA caused the production of higher volatile acidity.

The aim of the work was to identify the communication molecules between the colonies of Saccharomyces cerevisiae which formed the turbid path between two colonies. Proteins from that area were extracted and determined by 2-D gel electrophoresis with intention to understand intercellular communication (cross-talk) in yeasts.
