The primary purpose of the project carried out was development and implementation of analytical methodology, which will in future help to distinguish between samples and, consequently, also confirm the authenticity of the samples on the market. In this way we contribute to the protection of consumers, producers with established and reported quality control and help the supervisory bodies that would have such a methodology tool in detecting forgery and false labeling of fruit juices.

COBISS.SI-ID: 531596The purpose of this thesis was to validate the analytical method for qualitative and quantitative determination of anthocyanins in red fruits and red fruits juices in order to improve the quality control methodology of natural products containing natural colourants (EEC E163). High performance liquid chromatography was used for determination of anthocyanins in methanol extracts of red fruits in samples of Slovenian origin and red fruits juices in samples of red fruit juices of Slovenian origin.

COBISS.SI-ID: 11850518The purpose of this thesis was to develop analytical and chemometric methods that would characterize the authenticity of fruit juices based on their aromatic profiles. For research work, we used the juices and nectars Slovenian and foreign manufacturers. Selected sampling technique and capture of volatile flavor components was on solid phase microextraction - SPME technique. Sampling procedures, the optimal conditions for separation and determination by gas chromatography with mass detection were optimized by standard procedures for such analysis.
