We have described the methodology of determinations of phenolic compounds in plums and sweet cherries employing the HPLC-DAD/MS analysis. In this lecture, we've focused on major phenol representatives in both stone fruit varieties, that is anthocyanins and hydroxycinnamic acids. Our result have shown that both fruit varieties, sweet cherries and plums contain similar phenols, differences in amounts were noticed.
