In this contributino we describe determination of phenolic compouds in Istrska belica olive fruits employing extraction with ulsrasonic probe and HPLC-DAD/MS/MS technique. We have compared the amounts of phenols in the same olive fruit cultivar grown in different places in Primorska region. Quantification results were compared to antioxidant potential determination (static and kinetic) and we have seen that the ability of DPPH radical scavenging is strongly correlated to the amount of phenols, while flavonols are those whic are responsible for fast DPPH radical scavenging.

We have described the methodology of determinations of phenolic compounds in plums and sweet cherries employing the HPLC-DAD/MS analysis. In this lecture, we've focused on major phenol representatives in both stone fruit varieties, that is anthocyanins and hydroxycinnamic acids. Our result have shown that both fruit varieties, sweet cherries and plums contain similar phenols, differences in amounts were noticed.

In this contribution is presented seasonal variability of polyphenols of three sweet cherry cultivars (Tarcentka, Karnijevka in Petrovka) from 2002, 2007, 2008 and 2009 seasons. We have described the method for extraction of phenols from fresh fruits and liopilised material using US probe as well. The chromatographic method for determination of anthocyanins, hydroxycinnamic acids, flavanols and flavan-3-ols is described.

We have described and presented the method for determination fo nutritional status of grapevine Rebula after the vines have been treated with commerical mineral fertilazing agents. We have studied the impact of nutrient additions via soil and via leaves.
