This contribution to the ERK 2019 conference gives results of a preliminary analysis of impedance of porcine muscle tissue, performed in order to determine the initial degree (and later influence) od anisoropy of the muscle to its electrical impedance. Determining the anisotropy of tissue will be important later both for MREIT analysis as well as analysis of electroporation and mass transport in tissue (meat).

The work presented comprises an example of numerical modelling of electroporation in a treatment chamber designed for plant produce (black currant in this particular case), thus representing a step forward towards validation of the dynamic model of electroporated plant tissue. The work was performed in collaboration between the project lead and the Argentinian partner from within the scope of the SLO-ARG bilateral project BI-AR/2018-2019-001.
